How to un-enroll a student from a course

I want to leave my lesson plans available for future students down the road, but we are changing plans for one child and I would like to simply un-enroll him from a few courses. Can I do this without deleting the course?

You can "Share" your course and then download it for later use. Go to Courses-Export-To World and export it there. After that, delete the course. When you need it, you can use Courses-Import-From World and you will be able to use it again. Another way is just to uncheck all the school days for that course and it won't show on Today-Daily or count to your student's hours.
