Varying subject categories

Is it possible to assign different subject areas to individual assignments? For example, if I am entering a unit study as a course, reading a novel would be literature, making a timeline of the setting of the book would be history, etc. This way, the relevant assignments would then go to the report card by subject area instead of by course name. Is this possible?

It is only by course and each course will be under one subject. One approach for a unit study is to separate the daily activity by course. For example: Literature course every M and W (or M and T), History every T and Th (or W and Th), Bible every F etc... The description will be Unit Study: (title here) activity description for Lit for week 1... and so on for the other courses...
